Ingredients
- 200g self raising flour
- 175g Greek yoghurt
Method
Add 200g self raising flour to a large bowl with a pinch of salt and 175g Greek yoghurt, then mix until it forms a dough.
Roll the dough out on a floured surface to approx 2cm thick, then use a 5-7cm round pastry cutter (or cut around a large mug) to cut four or five muffins.
Heat a large, non-stick frying pan over a very low heat, then add the muffins. Griddle for around six to eight minutes on each side or until fluffy and risen.
Serve and enjoy!
